On their FAQ page, Insomnia Cookies states:

Personal experiences here are unknown. Unfortunately I haven’t had the chance to try the wildly hyped Insomnia Cookies experience out yet, but I hope to soon and will update this article when I do! UPDATE (February 17, 2022: I finally had the chance to try Insomnia Cookies last weekend in New York City and I was overjoyed. I went two nights in a row, lol, and I didn’t get sick. The gluten free chocolate chip cookies were delicious and so was the buttercream frosting. OMG, I need to go back soon.)
