No Bake Gluten Free Granola Bars Recipe

Today I’m excited to share a fun new recipe created by Jenn @_trust_your_gut. Jenn has both Celiac Disease and Hashimoto’s Disease and through living with these diseases, it has inspired her to create some pretty amazing gluten free, dairy free, and soy free recipes!

Let’s take a look at the first one, a no bake granola bar. This takes less than 2 hours (counting the 1 hour in the fridge) and makes for a delicious gluten free snack.

No Bake Granola Bars (GF/DF/ Soy Free)

Looking for a sweet and salty on the go pick-me-up? These granola bars are the perfect fix!

They combine certified gluten free oats with smooth nut butters, salty pumpkin seeds, sweet honey, and tart dried cherries.

Ingredients:
(Yield: 12 Bars)
– 2 1/3c certified gluten free oats
– 1/2c creamy peanut butter
– 1/2c smooth almond butter
– 1/2c honey
– 1/3c salted pumpkin seeds
– 1/3c dried cherries
– 1/3 tsp vanilla extract

To prepare:
– mix above ingredients in a glass bowl.
– line a 9inch rectangular baking pan lined with parchment paper.
– press mixture evenly into pan.
– place in refrigerator for 1 hour before cutting.
– slice into bars.
– enjoy!

 

A little more about the creator, Jenn:

I’m a mom of two from northern New Jersey. I am an elementary art teacher by trade, but I have always loved cooking. I was diagnosed with both Hashimoto and Celiac disease, which lead me to follow a holistic route for healing. All of my recipes are gluten, dairy, and soy free. When I’m not in the kitchen, I’m at the hot yoga studio or hiking with my family and mini dachshund, Ozzy.

The reason I started my page @_trust_your_gut was to help others in similar situations who are feeling lost or frustrated with an autoimmune diagnosis. Aside from recipes, I host a monthly celiac live with @invisibleillnessnliving where we teach others important information about living and thriving with celiac disease.
